Friday Five – March 29, 2024

  1. “He himself bore our sins” in his body on the cross, so that we might die to sins and live for righteousness; “by his wounds you have been healed.” ‍1 Peter 2:24 
  2. 99 Years – Today, my mom turns 99. It is amazing to think about the changes she has witnessed in her life. She has lived through very difficult times, very challenging life circumstances, but through it all, she has remained the kind and caring person, who thinks of others and focuses on the positive. I have been blessed, our family has been blessed and our community is a better place because of the good she has done and the people she has impacted. We started a campaign to get 99 letters for 99 years, to help her celebrate this amazing accomplishment. She has been enjoying a letter or two a day from friends and family since the middle of February. It has given her something to look forward to each day and brought lots of joy to her days. I am sure she will be rereading the letters in the months ahead.
  3. Lemon Meringue – This is one of Mom’s favourite desserts, so I wanted to make it for her birthday celebration. It is an easy dessert to make, but works best if the meringue part is made the night before. We affectionately call it styrofoam in our family, but it is the best styrofoam you will ever eat!
    Lemon Meringue
    4 egg whites
    1 cup white sugar
    Beat egg whites until stiff. Gradually add the sugar and continue beating until mixture is stiff and dry. Spread meringue on 2 cookie sheets lined with parchment paper forming equal sized circles. Bake in 275 degree oven for 1 hour. Turn heat off and leave in oven for an additional hour or overnight. Very carefully remove the paper and set aside until ready to assemble.
    Filling:
    4 egg yolks
    ¾ cup white sugar
    3 Tbsp lemon juice
    2 Tbsp lemon zest
    Stir and cook in heavy saucepan until thickened. Cool.
    Beat 2 cups of whipping cream until stiff. Blend half of this amount into the lemon curd until well-mixed. Spread between and on top of the two layers of meringue. Top with the remaining whipped cream. Garnish with fresh strawberries or mini eggs.
  4. Purging – My New Year’s Resolution this year was to purge one item every day. What a great resolution!  I have been able to be very successful with this and it is helping lighten my life!  Some days it is an item of clothing, a household item, a kitchen or bathroom item, but whatever it is, it always helps me feel like I am accomplishing something worthwhile. 
  5. Easter decorations – I have never been one for decorating much, if at all, for Easter. This year I went to my cousin’s house a few days ago and was inspired to follow her lead. Sweet bunnies, beautiful coloured eggs, and spring flowers all made her house look so special. With that inspiration, I took a trip to the dollar store. I found a couple of little bunnies, some grey Easter eggs (that I put in my red mantle truck), and some pretty spring-like flowers. Surprisingly, the mantle being decorated for Easter gave me a warm and happy feeling!
