Finding joy and adventure along the way

I started off the day with a walk to the west on the beach. Going this way on the beach, the sand felt softer and you would sink quite deeply, which made the walking more difficult. But the sand was beautiful and powdery. Going in this direction I saw more destruction from the hurricane, and some new builds, but several that hadn’t been touched in the past 4 years.
After my walk we had a breakfast of bacon, omelets and pineapple. this time the omelets were just as good as at the resort, but we had to make them ourselves.
It was not a good day for the boat as the surf was quite high so we took advantage of a beach and pool day. Treasure Cay Beach Villas had a beautiful pool and I made sure to get in it quite a bit while we were down there.
John and I also walked to the east later in the day and enjoyed spending some time on the Sandbar at that end of the beach. While we went for a walk on the beach Sarah was enjoying a restful time on the beach and she met a new friend. Little Sarah, as we refer to her, was from Alberta but going to school in Golden, BC. She had planned to travel with her mother on this trip but her mother was unable to travel. We instantly hit it off with her and invited her to join us for supper. This was the start of a week-long adventure with Little Sara. We called her our adopted daughter and we included her in basically everything that we did for the week. She hadn’t been able to get groceries on the way so all she had was ingredients to make grilled cheese sandwiches and she was really grateful to be included in our meal preparations.
Ian and Bill cleaned the Conch that we had caught the day before and Sarah and I investigated recipes to make conch fritters. As the conch was being cleaned and prepared it certainly didn’t look appetizing but there was a surprising amount of meat coming out of each of the shells.
Most conch fritters are round balls and deep fried but I was not willing to try deep frying on a gas stove, so we fried the fritters in a small amount of oil in a frying pan, but we made them more like fish cakes in shape so they would cook all the way through. The conch fritters were a hit. We also made a sauce to go with the conch fritters.
Supper consisted of the conch fritters along with some hamburger toast , salad and steak. We also had leftover cheesecake.
The drink of the day was Wackadoos which was Bill’s take on the Junkanoos from the resort. They consisted of whatever was there to add to the drink, but were basically a fruit punch with gin (or vodka, depending on your preference)!
Another amazing day on an island which we feel like we have virtually to ourselves. We are incredibly lucky to experience this perfect little piece of heaven.
